It only takes six simple ingredients to get a tasty pizza-like casserole you can enjoy with your kids. The melted cheesy texture of this dish is truly fantastic, and when combined with the unique flavor of pepperoni, you will get a filling, budget Keto meal to share with your family. This casserole will be perfect with some Keto-friendly ketchup or low-carb mayo. To get the most out of this lovely recipe, add a sugar-free pizza sauce over the cauliflower.

How to Make It

Step 1

Rinse and pat dry the cauliflower. Cut the cauliflower into smaller pieces. Add to a food processor and process until it resembles rice.

Step 2

Add the cauliflower rice to a bowl along with shredded mozzarella, oregano, and basil. Add half of the pepperoni and mix well to combine. Optionally, adjust the amount of herbs according to your taste.

Step 3

Preheat the oven to 350°F/175°C. Grease a 10×7-inch casserole dish with butter. Spread the mixture evenly over the base of the casserole dish.

Step 4

Top with the remaining pepperoni. Sprinkle the remaining mozzarella on top. Cover with the lid and bake for 30 minutes. Remove the lid and bake for another 10 minutes.

Step 5

When done, remove from the oven and cool for a while before slicing. Cut into four equal pieces and serve. This easy Keto pizza casserole goes great with a drizzle of your favorite Keto ketchup or low-carb mayonnaise.
