This low carb blueberry jam makes for a super sweet treat. Perfect as a topping for keto

How to Make It

Step 1

Add the blueberries, water and erythritol to a small pan over a medium/high heat and bring to a gentle boil.

Step 2

Reduce to a simmer and cook for 5 minutes, mashing the blueberries slightly until you have a reduced syrup.

Step 3

Remove the pan from the heat and add the lemon juice and chia seeds, stirring well to combine. Set aside to thicken and cool completely. Transfer to an airtight jar and refrigerate until ready to use.

Ingredients

  • Lemon Juice – 2 teaspoon
  • Chia Seeds – 2 teaspoon, whole pieces
  • Blueberries, Frozen, Unsweetened – 1-½ cup
  • 100% Pure Erythritol by Now – 1 tablespoon
  • Water – 1 tablespoon
