How to Make It

Step 1

Add the cream cheese to a mixing bowl along with the goat cheese, garlic powder, and half the parmesan. Mash the cheeses together until well combined. Add the ground almonds, rosemary, the remaining parmesan, salt, and pepper to a separate small bowl. Mix well to combine.

Step 2

Divide the goat cheese mixture into 8 even-sized portions. Roll each portion into a ball. If your mixture is too soft to roll, refrigerate until firm enough to shape. Roll each ball in the seasoned crumb mixture so that it is liberally coated all over. Transfer the coated cheese balls to a freezer-proof dish or tray. Cover and freeze until firm for 30 minutes.

Step 3

Preheat the oven to 400 degrees Fahrenheit. Arrange the coated goat cheese balls across a shallow oven tray. Transfer to the oven to bake for 6-8 minutes or until golden brown all over. Keep an eye on them when cooking to ensure they cook through and brown but do not melt. Serve as a salad topper or alongside your favorite Keto dips.
