How to Make It
Step 1
Heat the olive oil in a skillet over a medium heat and add the cauliflower rice and lime zest. Pan fry for 2-3 minutes until tender.
Step 2
Make a well in the center of the rice. Beat the egg and pour into the well. Season everything with a little salt and pepper then scramble using a wooden spoon until the egg is cooked through.
Step 3
Thinly slice the avocado and finely chop the scallion and cilantro. Add the rice and toss through to combine.
