In a pan over medium heat, add the chicken breast and cover with water. Bring to a boil and cook for 15 minutes until the chicken is tender. Then, remove from the water and shred using two forks.
Shred the lettuce, thinly slice the onion, and dice the cucumber. Add the veggies to a bowl. Add the shredded chicken on top.
Sprinkle the salt and black pepper and drizzle the lemon juice and olive oil. Toss the salad ingredients together to ensure an even coating on all ingredients. Enjoy.
