Shred the mozzarella cheese. Add the almond flour, xanthan gum, cayenne pepper, salt, and mozzarella to a bowl. Mix well to combine.
Microwave for 90 seconds or until the cheese has completely melted. Lightly grease your hands and knead the mixture into a ball. If the mixture is too thick, microwave for another 30 seconds.
Place the dough between two pieces of parchment paper. Roll the dough out until approximately 1/6 cm thick. Using a pizza cutter, cut the dough into tortilla chips.
Preheat the oven to 220°C (430°F). Line a baking tray with parchment paper. Bake the prepared chips for 5 minutes or until golden brown and crispy.
