Finely chop the parsley. Crack the eggs into a large bowl. Add the heavy cream, milk, chives, parsley, smoked trout, and pepper. Whisk to combine. You can add some salt to taste.
Preheat the oven to 150°C (300°F). Line a baking dish (9×7-inch) with parchment paper. Pour the mixture into the prepared baking dish and bake for 1 hour.
When done, remove from the oven and cool for about 15-20 minutes. Cut into 8 equal pieces and serve. It pairs perfectly with some sour cream or Greek yogurt.
