Peel and roughly chop the beets. Roughly chop the carrots. Trim the Brussels and remove the outer leaves. Cut each in half. Roughly chop the almonds.
Add the water, brown sugar replacement, maple syrup, and cinnamon to a medium bowl. Whisk well to combine. Optionally, adjust the amount of cinnamon according to taste.
Add the chopped vegetables and almonds to a large bowl. Pour in the prepared cinnamon mixture and season with salt and pepper. Toss to combine.
Preheat the oven to 200°C (400°F). Line a large baking tray with parchment paper. Arrange the vegetables over the prepared baking tray and bake for 30-40 minutes or until the vegetables are completely tender.
Garnish with fresh parsley and lemon slices. Serve immediately or store for later. It pairs perfectly with fried eggs or melted butter.
