How to Make It

Step 1

Fill a small bowl with frozen peas or drained peas from a can. Chop the cashews and red chili peppers, and add the ingredients to the bowl. You’ll also need to include chopped pineapple from a can or fresh pineapple.

Step 2

Heat sesame oil on high heat in a non-stick saute pan. Wait until the oil starts to smoke, then, add the bowl of ingredients. Cook the ingredients over high heat while stirring occasionally until they turn golden, particularly the pineapple.

Step 3

Add cauliflower rice (your choice of fresh cauliflower or thawed from frozen) to the pan. Keep the heat high while you cook the rice until the cauliflower begins to char, stirring occasionally. Then, pour the soy sauce over the rice.

Step 4

Keep cooking the rice while stirring all of the ingredients. Once the rice absorbs all the soy sauce, it will continue to cook to a golden brown color. Take the fried rice off your stove and add chopped basil. Stir one final time before serving.

Ingredients

  • Frozen peas – 2 oz
  • Cashews – 1 oz
  • Hot chili peppers, red, raw – 1 each – approx 4″ – 6″ long
  • Pineapple, canned in juice, drained – 1.5 oz
  • Sesame oil – 1 tbsp
  • Cauliflower rice – 12 oz
  • Soy sauce, low sodium – 2 tbsp
  • Basil – 0.25 cup, chopped
