Add the mascarpone, heavy whipping cream, powdered sweetener, and vanilla extract to a bowl. Using a hand mixer with whisk attachments, beat on medium speed for a few minutes or until fully incorporated.
The mixture should double in size and become a light and airy mousse. You can adjust the amount of sweetener according to taste. You can also adjust the amount of vanilla.
Transfer the mousse to serving glasses or bowls using a piping bag. For the best results, refrigerate the mousse before serving. Another good idea is to chill the bowls before adding the mousse.
Garnish the mascarpone mousse with your favorite low-carb berries, and add a few mint leaves. Serve immediately or store for later. Enjoy!
