This delicious Swiss chard casserole is a somewhat different addition to your regular Keto summer main dish recipes. This wonderful vegetarian casserole is a high-protein and low-carb lunch or dinner you can prepare for yourself and your loved ones. It takes about 15 minutes to prepare everything and the oven does the rest. It can be served warm or cold as it is or with a dollop of Greek yogurt or sour cream. This lovely dish is also freezer-friendly, so you can store any leftovers for a few months. Enjoy!

How to Make It

Step 1

Rinse the Swiss chard and remove the stems. Roughly chop the leaves and squeeze to remove as much liquid as possible. Add to a bowl.

Step 2

Add the feta cheese, eggs, goat cheese, sour cream, and coconut flour. Mix well to combine. Set it aside.

Step 3

Preheat the oven to 180°C (350°F). Grease a 25×18 cm (10×7 inch) baking pan with butter. Transfer the prepared mixture to the pan and flatten the surface as evenly as possible. Bake for 1 hour.

Step 4

When done, remove from the oven and cool for 10 minutes. Slice into 8 equal pieces. Transfer to serving plates.

Step 5

Serve immediately or store for later. This fantastic casserole pairs perfectly with some Greek yogurt or sour cream. Enjoy!
