Add ¼ cup of almond milk to a medium pot. Sprinkle the gelatin powder over the milk and let it sit for 10 minutes. Do not stir the gelatin.
Now, gently heat the gelatin mixture over medium-low heat. Stir constantly until the gelatin has completely melted. Pour in the remaining almond milk, heavy cream, sweetener, and vanilla extract. Mix well and bring to a boil over medium-high heat. Cook for 2-3 minutes, stirring constantly.
Remove from the heat and cool for 5 minutes. Transfer the mixture to serving bowls, glasses, or ramekins. Cool completely and refrigerate for at least two hours before serving.
Serve directly from the ramekins or transfer them to serving plates. Optionally, top with your favorite Keto-friendly jam and garnish with some fresh berries. Enjoy!
