This easy Keto microwave fudge recipe is made with just five main ingredients and is a simple and healthy way to soothe any sweet cravings!
Cashew butter forms the base of this Keto microwave recipe, giving it a lovely creamy texture. Cocoa/Cacao butter is used not only for the essential fats and the chocolate flavor it gives, but it also helps to set the fudge. Dutch process cocoa powder, vanilla extract, and sea salt are then added for flavor. At just 2g net carbs per 0.5oz serving, it really is a guilt-free treat!

How to Make It

Step 1

Line a small 8×8-inch baking tray or a loaf tin with baking paper and set it aside. Dice the butter into cubes. Place the butter and cacao butter into a microwave-safe bowl. Microwave for 90 seconds on high.

Step 2

Carefully remove the bowl from the microwave. Add the powdered erythritol and cocoa powder and use a whisk to stir until smooth. Add the cashew butter, vanilla extract, and sea salt and stir again to incorporate well, ensuring no lumps.

Step 3

Microwave for another 90 seconds, at 30-second bursts, to ensure it doesn’t burn. The mixture will begin to bubble and resemble a chocolate mousse.

Step 4

Pour into a lined baking tray or loaf pan. Place in the fridge for at least 2 hours until set. For best results, allow it to set fully overnight.

Step 5

Sprinkle sea salt over the top and cut into 25 squares. Store in an airtight container in the fridge.
