How to Make It

Step 1

Peel and finely chop the onion. Peel and finely chop the garlic. Heat the olive oil in a large pan over medium heat. Add the onion and garlic to the pan and stir well. Cook for 5 minutes.

Step 2

Finely chop the peppers and parsley. Add the chicken breasts, peppers, parsley, tomatoes, cayenne pepper, turmeric, cumin, and salt to the pan. Pour in the broth and bring to a boil.

Step 3

Reduce the heat to medium. Cook for 20-25 minutes, stirring occasionally. Remove the chicken from the pan and set it aside.

Step 4

Cut the cauliflower and broccoli into smaller florets. Shred the cabbage. Add to the pan and cover with the lid. Cook for 12-15 minutes.

Step 5

Meanwhile, shred the chicken. Add to the pan and mix well. Cook for another 5-6 minutes.

Step 6

Peel and finely chop the avocado. Transfer the soup to serving bowls and top with avocado. Optionally, garnish with some fresh parsley or cilantro or top with sliced chili. Serve immediately.
