How to Make It

Step 1

Preheat your oven to 350F /180 C and line a loaf pan with baking paper. Place the gelatin powder with 2 tbsp room temperature water. Let the gelatin bloom for a couple of minutes.

Step 2

Add the boiling water and whisk. Place the bowl in the microwave and heat for 10 seconds until the gelatin is dissolved. Add the oil, coconut yogurt, and vinegar and whisk until incorporated.

Step 3

Add the tiger nut flour, tapioca flour, baking soda, and salt. Whisk until smooth. Transfer the batter to the lined loaf pan.

Step 4

Bake for 40 minutes or until an inserted toothpick comes out clean. Remove the loaf from the oven and let it cool for 10 minutes. Transfer to a baking rack and let it cool completely.

Step 5

Slice the loaf into 12 slices. Serve immediately. Store the remaining slices in an airtight container in the fridge.

  • Coconut Milk Yogurt Alternative, Unsweetened – 0.5 cup
  • Water – 2 tbsp
  • Gelatin – 1 tbsp
  • Boiling water – 2 tbsp
  • Avocado oil – 0.25 cup
  • Apple cider vinegar – 2 tsp
  • TigerNut Flour, Gluten-Free – 2 cup
  • Tapioca Flour – 0.25 cup
  • Salt – 0.25 tsp
  • Baking soda – 0.5 tsp
