- 5\u00a0Tablespoons\u00a0water\u00a0divided (2 cold, 3 boiling)<\/li>\n
- 2\u00a0cups\u00a0fresh or frozen raspberries<\/li>\n
- 1\/3\u00a0cup\u00a0low carb sugar substitute\u00a0or erythritol<\/li>\n
- 1\/8\u00a0teaspoon\u00a0stevia<\/li>\n
- 1 1\/2\u00a0cups\u00a0heavy cream<\/li>\n
- 1\u00a0teaspoon\u00a0vanilla extract<\/li>\n<\/ul>\n
Instructions<\/h3>\n\n- In small cup, sprinkle gelatin over 2 Tablespoons cold water; let stand a minute or so to soften. Add 3 Tablespoons boiling water; stir until gelatin is completely dissolved and mixture is clear. Cool slightly.<\/li>\n
- Cook raspberries, erythritol, and stevia over medium low heat until sweetners are dissolved. Cool, then remove seeds by pressing mixture through a fine metal strainer basket with a spoon. Stir in gelatin and set aside.<\/li>\n
- Whip cream with vanilla extract until soft peaks form. Gently fold in raspberry mixture. Spoon into 6 dessert cups. Serve with chocolate sauce over top, if desired.<\/li>\n<\/ul>\n
Notes<\/h3>\n\n- For a stronger raspberry flavor, add in 1 teaspoon of raspberry extract<\/li>\n
- 1 to 2 ounces of softened cream cheese can be beaten in for a cheesecake flavoring.<\/li>\n
- An ounce or two of melted chocolate can be added.<\/li>\n
- Mix in one tablespoon lemon juice to help preserve the fresh fruit.<\/li>\n<\/ul>\n
