These oven-baked Keto waffles are one of the best vegan Keto desserts you’ll ever try. They are crispy on the outside and fluffy on the inside, with the best flavor you can imagine. This recipe is a perfect afternoon treat or even a weekend breakfast idea. Depending on the type of protein powder you’re using, you might need to add some more almond milk. You can also add some sweetener according to your taste. Serving options are also endless. They are wonderful with some unsweetened vegan whipped cream, Keto-friendly chocolate sauce, fresh berries, or your favorite low-carb jam.
Add the almond milk, psyllium husk powder, chocolate protein powder, and almond butter to a large bowl. Using a hand mixer, beat until completely smooth. Let the mixture rest for 10 minutes.
Stir in the chocolate chips. Optionally, add vanilla extract. You can also add some sweetener according to your taste.
Preheat the oven to 350°F (175°C). Brush a silicone waffle mold with coconut oil. Pour the batter into the mold and bake for 15 minutes.
When done, remove from the oven and cool for 10 minutes. Carefully remove the waffles from the mold. Transfer to serving plates.
