This Ultimate Green Bean Casserole is the perfect holiday side dish you can prepare for your family and friends. This filling dish is done in under an hour and packed with healthy fats and fiber. The recipe yields 4 servings but you can double the ingredients to feed more. We added some bacon to the recipe for a nice smoky flavor you will absolutely love (but feel free to omit it). This lovely dish is best when served warm from the oven. Enjoy!

How to Make It

Step 1

Cook the bacon over medium-low heat until crisp. Remove from the pan and transfer to a plate lined with paper towels to drain. Crumble the bacon and set it aside.

Step 2

Peel and finely chop the onion. Drain away all but about two tablespoons of bacon grease. Return the pan to medium heat. Add onions and cook for 5 minutes.

Step 3

Thinly slice the mushrooms. Peel and mince the garlic. Add the mushrooms and garlic to the pan and stir well. Cook for 5 minutes or until the mushrooms are golden brown.

Step 4

Add the soup, almond milk, and bacon. Stir to combine. Optionally, season with some salt and black pepper to taste.

Step 5

Grate the cheese. Add the cheese to the pan and stir well. Cook for another 1-2 minutes.

Step 6

Fold in the green beans. Reduce the heat to medium-low. Cook for 5 minutes.

Step 7

Preheat the oven to 175°C (350°F). Grease a 28x15cm (11×6 inch) casserole pan with cooking spray. Pour the mixture into the prepared dish and top with fried onions.

Step 8

Bake, covered, for about 20 minutes or until casserole is hot and bubbly. When done, remove from the oven and transfer to serving plates. Serve while fresh and warm.
