How to Make It
Step 1
Preheat the oven to 400°F (200°C). Line a baking tray with parchment paper. Cut the peppers in half, lengthwise, and remove the core. Place on the prepared baking tray. Drizzle one tablespoon of olive oil over the peppers and roast for 15 minutes.
Step 2
Roughly chop the cherry tomatoes and parsley. Slice the garlic. Add the remaining olive oil to a large pan and heat over medium-high heat. Add the roasted peppers, cherry tomatoes, parsley, garlic, salt pepper, paprika, cumin, and cayenne pepper.
Step 3
Cover with the lid and cook for 15 minutes. Remove the lid and reduce the heat to medium-low. Continue to cook for another 5-6 minutes.
Step 4
When done, remove from the heat and transfer to serving plates. Garnish with lemon wedges and fresh parsley. This is a great side to your favorite Keto meals.
