Add the almond flour and baking powder to a bowl. Mix well until completely combined. Make sure to break up any lumps.

In another bowl, combine the eggs, cream cheese, Greek yogurt, butter, erythritol, and vanilla extract. The butter should be at room temperature. Using a hand mixer, mix until completely smooth.

Add the dry ingredients and beat well again. This should take about 2 minutes. Optionally, taste and add more sweetener.

Grease a waffle iron with some coconut oil or cooking spray. Preheat and pour the batter into the waffle iron. Depending on the size of your waffle iron, you will need about 1/3 – ½ cup of the batter.
Step 5
Cook until golden and crispy. Repeat until you have used all the batter. Use the prepared waffles to cut and shape the menorah. Optionally, garnish with some oranges or tangerine slices for presentation. Enjoy!
