How to Make It
Step 1
Cut the cauliflower into small florets. Add the cauliflower to a food processor. Process until it resembles rice.

Season with salt and let it sit for 10 minutes. Spoon the cauliflower into a piece of muslin cloth or into a clean tea towel. Squeeze out as much liquid as you can.
Step 3
Shred the cheddar cheese. Add the cauliflower, cheddar, eggs, flaxmeal, and pepper to a bowl. Mix until completely combined. Optionally, add some dried herbs or red pepper flakes to taste.

In a large frying pan, add the butter and heat over medium-high heat. When hot, add ¼ cup of the cauliflower mix and flatten out into small pancakes. Fry for 2-3 minutes on each side.
