Wash the cucumber, celery, and mint. Roughly chop the cucumber and celery and separate the mint leaves from the stems. Discard of the stems.
Add the chopped veggies and mint leaves to the blender. Pour the water over the veggies. Blend until smooth.
Line a fine strainer with a clean cloth and place it over a bowl or jug. Pour the green mixture into the cloth. Let it strain for a couple of minutes.
Squeeze the cloth to extract the remaining liquid from the pulp. Remove the strainer and discard the pulp. To the strained juice, add the lemon juice.
Add the ice to a glass. Pour the green juice over the ice and garnish with fresh mint. Serve immediately!
