Add the almond flour, coconut flour, xanthan gum, baking powder, and salt to your food processor. Pulse to combine. If you don’t have a food processor, you can whisk these ingredients into a bowl.
Pour the vinegar and pulse a little more until distributed. Add the egg and cream cheese and pulse until the dough forms into a ball. Wrap the dough and let it sit for 10 minutes.
