These flaky salmon fillets in white wine sauce are an excellent addition to your low-carb summer main dish recipes. This dish is bursting with flavors; it’s filling and only takes about half an hour to prepare, which is perfect for busy days when you don’t have much time to spend in the kitchen. This lovely meal can be served as a fantastic lunch or dinner with your favorite Keto-friendly sides (such as fresh or roasted low-carb veggies or cauliflower rice). Heat olive oil and 1 teaspoon of butter in a large pan over medium heat. Season the salmon with 1/8 teaspoon of salt and add to the pan. Fry for 5-6 minutes and then carefully turn over. Continue to cook for another 5 minutes or until fully cooked through.
Remove the salmon from the pan and set it aside. Peel and finely chop the garlic. Finely chop the parsley. Add the wine, garlic, lemon juice, heavy cream, 1 tablespoon of butter, 1/8 teaspoon of salt, black pepper, and parsley to the pan. Mix well and reduce the heat to medium-low. Cook for 10-12 minutes. Stir occasionally.
Add the capers and mix well again. Continue to cook for a couple of minutes more. Taste and optionally add more salt or black pepper.
Add the prepared salmon to the pan. Cover with the lid and let it sit for a couple of minutes. Optionally, sprinkle with some more lemon juice.
Transfer the fillets to serving plates. Drizzle with some more sauce and garnish with lemon slices. Serve with fresh arugula and cherry tomatoes. Enjoy!
