To a skillet over medium heat, add the oil. Chop the bacon and add it to the skillet. Cook until crispy and golden for about 6 minutes. Remove the bacon using a slotted spoon and place it on a paper towel.

Discard half the bacon grease. Finely chop the onion and place it in the skillet. Cook for 10 minutes, often stirring, until it’s translucent, soft, and golden. Remove the caramelized onion from the pan and place it in a large bowl.

Add the sour cream, bacon, shredded cheese, salt, and pepper to the bowl with the onions. Finely chop the chives, and add them to the bowl. Stir to combine.

Cover the bowl with plastic wrap, and refrigerate it for at least one hour to chill. When ready to serve, transfer it to a serving bowl. Serve with Keto crackers or chopped veggies.
