Use a vegetable peeler to peel the carrot into long strands. Doing so keeps the carrot fibers long and intact. Feel free to use a box grater, but we like the texture the vegetable peeler gives the carrots. There will be some carrot left that you cannot peel, but this makes for a good snack.

Once the carrot is peeled, add the oil, apple cider vinegar, and sea salt. Stir well to combine and serve immediately! The recipe can also be batch prepped to have carrot salad prepared for subsequent days.
