This simple and delicious pasta dish uses store bought sausage complimented by a rich and creamy mustard sauce to make an easy weeknight dinner.Perfect on its own or accompanied by a slice of our keto garlic bread.
How to Make It
Step 1
Remove the zucchini skin and discard. Peel the flesh into wide pasta ribbons. Set aside.
Step 2
Heat the oil in a large pan over a medium/high heat and then dice the sausage into one inch pieces. Add to the pan and fry until golden brown all over and completely cooked through.
Step 3
To prepare the sauce add the stock to a small pan over a low/medium heat and then add the cream, mustard and tarragon. Stir well to combine. Bring to a boil then reduce to a simmer cooking gently until thickened and reduced.
Step 4
Once the sausages are cooked add the zucchini spaghetti to the pan with the sausages and sauté for 30 seconds to 1 minute until just tender.
Step 5
Pour the mustard cream sauce over the pasta and stir to combine. Serve immediately.
