Roughly dice the chorizo into bite-sized chunks. Heat the olive oil in a skillet over a medium/high heat. Add the diced chorizo. Cook the chorizo for a few minutes until golden and releasing its oils.

Crush the garlic and roughly chop the tomato. Add the garlic, lemon zest, and tomato to the skillet. Stir well to combine. Cook through for a few minutes more, softening the tomato in the chorizo oil.
Step 3
Roughly chop the fresh basil. Add the zucchini noodles to the skillet. Stir well, coating the noodles in the sauce and flavorings. Cook the zucchini for just a few minutes until hot and just tender. Do not overcook, or the zucchini will become mushy. Stir through the chopped fresh basil. Serve hot.
