Thaw the spinach and roughly chop. Arrange in an oven proof dish.

Add the cream cheese, mayonnaise, olive oil, lemon juice, Parmesan, cheddar, salt and pepper to a mixing bowl. Mince the garlic and add to the bowl. Mix everything together well to combine.

Scatter the basil over the chopped spinach.

Spoon the cream cheese mixture over the spinach and stir everything together until well combined.
Step 6
Transfer to the oven for 20 minutes to bake. Remove and scatter over the pine nuts. Return to the oven for a further 5 minutes until golden brown and cooked through.
