Add the cream cheese, lakanto syrup and vanilla extract to a mixing bowl. Stir well to combine until smooth.
Add the peanut butter to the bowl and gently swirl through the cream cheese mixture.
Spread 2/3 of the peanut butter mixture across two of the pancakes.
Sandwich with the remaining pancakes and top the centres with the remaining peanut butter mix.
Top with fresh raspberries to serve.
