Lay your steak on a flat surface and rub the olive oil into the flesh. Season the steak with seasoned salt, pepper, and garlic powder. You may choose to let the salt and oil marinate the steak in your refrigerator for a minimum of 1 hour. However, you can continue straight on to cooking the steak without marinating. Heat a cast-iron skillet over high heat on the stove. If you don’t own a cast-iron skillet, use a non-stick pan.
Place the steak in the hot skillet seasoned side down and cook until the spices char. When the steak naturally releases from the pan, flip it over to cook on the other side to your desired level of doneness. Adjust the heat as necessary to avoid burning. The steak will continue to cook under a broiler in the next step, so you may wish to undercook it. Finish the steak by melting butter in the skillet over low heat. Use tongs to flip and coat the steak in butter in the skillet.
If you are using a cast-iron skillet, take it off the stove heat, and sprinkle a thick layer of parmesan cheese over the top of the steak. If you were using a regular non-stick pan, you’ll have to transfer the steak to a sheet tray lined with parchment paper before topping it with parmesan cheese. Turn on your oven broiler to preheat on high heat, and sprinkle the italian seasoning over the cheese. Place the steak under the broiler and let it cook until the cheese melts, browns, and the edges of the steak caramelize – about 5 minutes.
When the steak is done, set it aside to rest while you make your side dish. Leave the oven broiler on. Line a sheet tray with parchment paper or use the same tray you cooked the steal on to arrange the avocado. Remove the avocado from its skin and slice it into thin slices. Fan out the avocado slices so they’re slightly overlapping each other.
Sprinkle salt and squeeze lemon juice over the avocado. Add bacon bits or chopped cooked bacon on top of the avocado followed by cheddar cheese and minced chives. Cook the avocado under your broiler for just a few minutes until the avocado is warm and the cheese is melted. For serving, add sour cream on top or next to the loaded avocado. Serve the steak whole or slice it as depicted in the photo.
