How to Make It

Step 1

Preheat the oven to 350 degrees. In a large mixing bowl, whisk together the eggs, egg whites, stevia, vanilla, greek yogurt, and orange zest. Melt the butter and whisk into the bowl. In a separate bowl, sift together the flour, baking powder, and salt. Whisk the dry ingredients into the wet ingredients and temporarily set aside.

Step 2

Line a bread loaf pan with parchment paper. Use a spatula to fold the dried cranberries into the batter. Then, immediately pour the batter into the lined pan. Spread the batter and smooth it over if needed. Bake the loaf for 50 minutes, using a toothpick to test for doneness. After baking, let the loaf cool for about 5 minutes.
