You will love this Low Carb microwave meal that is very easy to prepare and made using only a microwave for cooking! Tender ground beef is cooked with Italian seasonings and kosher salt for a simple yet delicious meat mixture. Spaghetti squash which is cooked directly in the microwave, results in a sweet, yet perfectly cooked squash that is easy to separate into strands. We also created a delicious red sauce by heating smashed fresh garlic cloves in olive oil first and then adding tomato sauce. The result? The ultimate beef and spaghetti dish made with a Keto-friendly tomato sauce created with minimal prep that is also family-friendly.
Cut the spaghetti squash in half lengthwise. You will want to use a very sharp knife for this or even a clever. Scoop out the seeds and discard them. Place the squash halves cut side down into a 9”x13” pan.
Add enough water to bring the water level in the pan to around ½” up the sides. Cook the squash for 20-21 minutes total on high. Break the time up into 5-8 minutes increments by rotating the casserole dish (if the turntable will not move freely) for a total of about 20-21 minutes. Allow it to cool slightly. Then scrape the inside to loosen the squash. Weigh out the amount needed for the recipe. Set aside as it will continue to cook while you prepare the other components.
Place the raw beef in a large microwave-safe bowl. Microwave on 50% powder for 20 minutes. Halfway through the cooking time, break up the meat with a spoon and give it several good stirs. If there is still pink throughout the beef, you can cook it on high heat for 2-3 minutes until cooked through. Drain off the fat and water. Set aside.
Add the olive oil to a medium-sized microwave-safe bowl. Smash the garlic cloves and add them to the bowl with olive oil. Microwave on high for 45 seconds.
Add the tomato sauce and sea salt until heated through about 1 ½ minute on high. Taste adding more sea salt as desired. If the tomato sauce is too sweet, you can add a dash of apple cider vinegar to balance it.
To assemble the plate, scrape the spaghetti squash to loosen the strands. Place the spaghetti squash in the center of a plate topped with cooked beef. Top with tomato sauce. Sprinkle on cheese, if desired.
