Preheat the oven to 400 degrees Fahrenheit. Wipe the mushrooms clean and slice in half. Cut the tomato and onion into four wedges. Arrange the mushrooms, onion and tomato in a medium-sized oven dish.
Step 2
Arrange the sausages in amongst the vegetables. Add the olive oil, harissa paste and lemon juice to a small bowl. Mix well to combine.
Step 3
Drizzle the harissa oil over the vegetables. Transfer the tray to the oven and roast for 25 minutes or until the sausages are cooked through, and the vegetables are tender, turning halfway through. Serve with your preferred Keto sides.
