Thinly slice the avocado and roughly chop the cranberries. Add 1 packed cup of arugula and 1 packed cup of baby spinach to a large serving/salad bowl. Add the cranberries and spinach and toss to combine.

Roughly tear the prosciutto and crumble the goats cheese. Add the prosciutto pieces and goats cheese to the salad bowl. Gently mix together to combine.
Step 3
Finely chop the rosemary and add to a small bowl. Add the olive oil, orange juice and syrup to the bowl. Season with a small pinch of salt and pepper and mix well to combine.
Step 4
Drizzle the dressing over the salad and mix everything gently to coat in the dressing. Arrange the walnut halves over the top of the salad. Serve immediately.
