Add almond milk, heavy cream, coconut oil, vanilla extract, and liquid stevia to a pot on the stove. Whisk the ingredients together as you begin heating them over medium heat. Bring the pot to a simmer, stirring until the coconut oil melts, then reduce the heat to just under a simmer so the pot stops bubbling.
Step 2
Add Keto chocolate chips and espresso grounds to your pot. Since chocolate chips are measured on the packaging by amount, please note that 120 chips = 1 ounce. Whisk the chocolate and espresso into the pot until the chocolate melts and your hot chocolate thickens.
Step 3
Pour the hot chocolate into a mug. Taste and add more liquid stevia if you want it to be sweeter. It is optional to include Keto whipped cream or marshmallows on top of your hot chocolate at your discretion.
