How to Make It

Step 1

Make sure all your mussels have been cleaned and rinsed. Place the mussels in a large pot, so they can cover the bottom without piling on top of each other. Add in the chicken broth, fresh oregano sprigs, and thyme sprigs.

Step 2

Cover the pot and bring the pot to a strong simmer. Remove the lid, and continue simmering the pot for about 5 minutes so the broth reduced slightly. Then, transfer the mussels and herbs to a clean serving plate. Leave the broth in the pot.

Step 3

Turn the stove’s heat down to low. Melt the butter into the broth. Then, gently stir in the heavy cream, salt, and pepper.

Step 4

When the liquid is heated through and emulsified, stir in the parmesan cheese. Once the cream sauce has thickened, pour it over the mussels for serving. Enjoy!
