Corned beef is a spring classic, especially around Saint Patrick’s Day. It is simple to make, especially when using a pressurized cooker like an Instant Pot. If you do not have one, simply cook the corned beef in a dutch oven over low heat for 2 ½ – 3 hours or until tender.
How to Make It
Step 1
Place corned beef and any liquid from the packing into the bottom of an Instant pot. Add pickling spices, smashed garlic cloves, sliced yellow onion and water. Add an additional cup of water if you like corned beef less salty. Cook on high pressure for 75 minutes. Then release the steam.
Step 2
Add cabbage cut into wedges and the baby carrots. Cook on high pressure for 1 minute.
Step 3
Remove vegetables to a plate and slice corned beef to serve.
