Make the caprese side dish first. Slice fresh, whole milk mozzarella into 4 slices per serving. Do the same with the roma tomatoes, slicing them into ¼-inch – ½-inch thick pieces. In a small dish or container, arrange the mozzarella and tomato slices by slightly overlapping one over the other, alternating between cheese and tomato.
Chop fresh basil and sprinkle it over the mozzarella and tomato layers. In a small bowl, whisk together the olive oil, white wine vinegar, lemon juice, and a pinch of salt and pepper to taste. Drizzle this mixture over the caprese side. Cover and store the side dish in your refrigerator to marinate during the remainder of this recipe. At your discretion, you can marinate the caprese side for longer to increase the flavor.
When you’re ready to cook the main dish, preheat an oven to 350 degrees. Toss whole, washed, French green beans in a mixing bowl with the olive oil, salt, and Italian seasoning. You can quickly mix with one hand until the green beans are coated in the spices. If you want softer green beans without any snap to them, you can blanch or steam your green beans beforehand for just 1-2 minutes.
Set the bowl of green beans aside. Prepare 4-ounce chicken breasts by patting them dry and pounding them to ½-inch thick pieces with the flat side of a meat tenderizer. You can also slice a tick, 8-ounce chicken breast into thin slices for this recipe. Season the thin-sliced chicken breast with lemon pepper, pepper, paprika, and garlic powder.
Prepare a well-seasoned sheet tray with some pan spray or line with parchment paper. Lay down 1 slice of prosciutto per serving horizontally on the tray. Place the seasoned chicken in the center of each prosciutto slice to make a cross. Arrange about 2 ounces of seasoned green beans in the center of each chicken breast and pull the two ends of prosciutto over the beans.
If necessary, use 2-3 toothpicks per serving to secure the prosciutto in place over the green beans and chicken. Cut the butter into small dollops, and arrange about ½ tablespoon of butter dollops on top of each wrapped chicken portion. Place a dollop of butter over the ends of the prosciutto will also help them stay in place during baking. Set your tray of wrapped chicken in the oven for 20 minutes, until the prosciutto is crispy and the chicken is cooked throughout. Serve each chicken bundle with about 4 slices of caprese mozzarella and 4 slices of caprese tomatoes.
