Preheat an oven to 325 degrees. Line a sheet tray with parchment paper and set this aside. Collect all your ingredients before starting. If there are other Keto nuts you would like to substitute within this recipe, you can replace either the almonds, walnuts, or pecans with them. Chop and toast the pecan and walnuts in a small pan over low heat on your stove. The nuts will become toasted and fragrant after about 30 seconds. In a large mixing bowl, toss together the nuts, seeds, coconut flakes, cinnamon, and dried blueberries. Melt the coconut oil in your microwave. Stir the vanilla and liquid stevia into the melted coconut oil. Use a spatula to fold the cereal with the flavored coconut oil until all ingredients are coated. Spread the cereal out onto your lined sheet tray.
Bake the tray for 30 minutes. Let the tray of cereal cool completely before serving and eating. After cooling, you can break the cereal apart into bite-sized chunks, much like a granola mix. For serving, pour a ½-cup of blueberry cereal into a bowl and fill with your favorite non-dairy milk. Coconut milk, almond milk, and oat milk are all good options. Top your cereal at your discretion with extra dried blueberry, fresh blueberries, a sprinkle of extra cinnamon, or extra flaked coconut.
