How to Make It

Step 1

Add the walnuts to a dry skillet over a low/medium heat and toast gently for 3-4 minutes.

Step 2

Finely dice the cucumber and tomato, roughly chop the basil and thinly slice the olives. Add to a serving bowl along with the capers, season and toss to combine.

Step 3

Crumble over the feta cheese and walnuts.

Step 4

Whisk together the oil and balsamic. Drizzle over the salad to serve.

  • Black Olives – 6 medium
  • Walnuts – 2 tablespoon, halves
  • Feta Cheese – 1 tablespoon
  • Tomato – 1 medium – 2 3/5″ diameter
  • Capers – 1 tablespoon, whole pieces
  • Olive Oil – 1 tablespoon
  • Balsamic Vinegar – ½ tablespoon
  • Cucumber – ⅓ large – 8 1/4″ long
  • Basil, Fresh – ¼ cup, whole pieces
  • Salt, Sea Salt – ⅛ teaspoon
  • Black Pepper – ⅛ teaspoon
