Cut the sirloin steak into cubes and add to a bowl. Mince the garlic cloves and add 4 minced cloves to the bowl. Add erythritol, soy sauce, salt, and pepper. Juice the lime in the bowl.
Mix and cover the bowl with cling film. Marinate in the fridge for 1 hour at least, up to 8 hours. Meanwhile, slice the onion and scallion and set aside.
Add the oil to a large wok or a cast iron pan and place it over high heat. Heat the pan until the oil starts smoking. Add the remaining minced garlic clove and cook for 10-20 seconds until golden.
Add the beef cubes and sear on all sides, shaking the pan until the meat is medium rare, 1 to 2 minutes. Transfer the beef to a plate.
Toss the sliced onions in whatever marinade is left in the bowl. Add the onions to the wok and sauté until soft and golden. Return the beef and juices to the pan with the onions and toss.
Transfer the shaking beef to a serving platter and sprinkle the scallion on top. Serve with other Vietnamese side dishes or some sticky cauliflower rice. Enjoy!
