Scoop out the seeds. The weight of the cucumbers in this recipe is without seeds. Then slice them in the other direction into ¼” thick U-shaped slices.

Slice the country ribs very thin about ⅛” thickness.
Step 4
Heat a large pan over high heat and heat until very hot. Add the pork, then season with ¼ t sea salt and ¼ t black pepper. Leave undisturbed until they release easily from the pan and are browned on one side. Stir.
Step 5
Add garlic grated and stir into the pork. Add in 1 tablespoon of fish sauce. Stir until pork is almost cooked through.
Step 6
Add the cucumbers and cover with a lid for 5 minutes. Add in an additional 1 tablespoon of fish sauce and ½ t sea salt. Cook covered for another 5 minutes until cucumbers are slightly soft, but still crunchy. Serve hot with cauliflower rice and a big spoonful of the “juice” that is created at the bottom of the pan!
