Thinly slice the garlic and dice the onion. Add to a food processor. Add the lemon zest, soya mince, cauliflower rice, cilantro, parsley, cumin, tahini, salt and pepper. Blend until well combined and you have a semi coarse paste. You may add more spices and herbs as desired.

Spoon the falafel mixture into a mixing bowl. Add the ground almonds. Mix everything together well with your hands.
Step 3
Divide the falafel mixture evenly into 8 portions. Roll each portion into a ball with your hands. Heat the olive oil in a large skillet over a medium/high heat.
Step 4
Add the falafel balls to the hot skillet. Pan fry for 2-3 minutes each side, or until golden brown all over and cooked through. Serve with your preferred Keto sides or dips.
