Dice up the tofu into about 1” x 1” pieces. Toss the tofu with 1 tbsp avocado oil and ½ tsp kosher salt.
Step 2
Place the tofu into the bottom of an air fryer and cook at 400 F for 20 minutes. Be sure to give the basket a shake halfway through the cooking time.
Step 3
In the meantime, prepare the stir fry sauce by combining the soy sauce, water, xanthan gum, and sesame oil.
Step 4
Preheat a large nonstick skillet over medium-high heat. Add 1 tbsp avocado oil and swirl the pan. Add in minced ginger and garlic and stir briefly for about 30 seconds. Then add in the broccoli and 1 tbsp of water.
Step 5
Stir briefly to steam the broccoli. Add in the sauce and allow it to cook with the broccoli. The sauce will start to thicken.
Step 6
Add in the crispy tofu and toss everything together quickly.
Step 7
Serve immediately.
