Step 1
Add the coconut to a pan over medium-low heat. Toast for 2-3 minutes, while stirring, until golden. Set aside to cool.

In a large jar or pitcher, add the coffee, room temperature water, and toasted coconut. Mix everything and cover. Place the jar/pitcher in the fridge for 8 hours.
Step 3
Place a piece of filter paper inside a colander, and place it over a glass bottle or empty jar. Gently pour the coffee into the bottle/jar and let it strain. Remove the colander and coffee-filled filter paper, and store the bottle/jar in the fridge for up to 2 days.
Step 4
Pour it in a glass over ice. You can add a vegan creamer or coconut milk if desired. Serve immediately.
