How to Make It

Step 1

In a bowl or baking dish, add the coconut milk and melted coconut oil. Whisk together until well combined. Add the vanilla extract, roughly chopped chocolate bar, and half the amount of the chocolate chips. Mix until well combined.

Step 2

Cover the dish with plastic wrap and gently press it down just until it touches the top surface of the ice cream mixture. Transfer the dish to the freezer and chill for about 1 hour. After 1 hour, mix well and allow any frozen pieces to melt for about 10-15 minutes before mixing one last time.

Step 3

Cover the dish with the same plastic wrap and return the ice cream to the freezer for a further 1 hour. Remove the dish from the freezer and allow it to melt for 5-10 minutes, then scoop the mixture into a high-speed blender. Add the remaining chocolate chips and blend until smooth.

Step 4

Pour the ice cream mixture back into the dish and freeze for another 30 minutes. When ready to eat, remove the ice cream from the freezer and allow it to soften up a little. Scoop it out into a bowl and enjoy cold.
