This recipe is a perfect choice if you’re interested in the Mediterranean Keto diet. Tender chicken breasts are prepared in a beautiful creamy sauce with some shredded parmesan and spinach. It’s a fantastic lunch or dinner option that will keep you full for hours. The dish can be served as it is, or alongside your favorite Keto-friendly sides, such as mashed cauliflower or fresh vegetables. It pairs perfectly with some sour cream or Greek yogurt. Although it takes a little extra time to prepare, this recipe is definitely worth it!

How to Make It

Step 1

Heat the olive oil in a large pan over medium heat. Season the meat with salt and pepper on both sides and add to the pan. Cook for 15 minutes, turning once.

Step 2

Pour in the heavy cream and chicken broth. Add the dried chives and garlic powder. Reduce the heat to medium-low and cover with a lid. Cook for 20 minutes. Remove the lid and continue to cook for another 10-12 minutes.

Step 3

Roughly chop the spinach. Add the sun-dried tomatoes, tomato paste, spinach, and fresh thyme to the pan. Stir the sauce well and continue to cook for another 15 minutes or until the sauce thickens.

Step 4

Taste, and optionally add some more salt or pepper. Add the shredded parmesan and optionally garnish with some more fresh thyme. Serve immediately.
