How to Make It

Step 1

Drain the tuna and add to a bowl. Finely chop the spinach. Add the spinach, eggs, parmesan, coconut flour, onion powder, and cayenne to a bowl with tuna.

Step 2

Mix well to combine. The mixture will be slightly wet, but that’s normal. Let it sit for 5-6 minutes.

Step 3

Heat the olive oil in a large pan over medium heat. Divide the mixture into 12 equal portions, about three tablespoons each. Shape into patties and fry each for 2-3 minutes per side.

Step 4

Roughly chop the lettuce. Cut the cherry tomatoes into quarters. Thinly slice the cucumber. Add the lettuce and cherry tomatoes to one side of your lunchbox and top with tomatoes and blueberries. Add the cucumber next to it. Add the red currants, pumpkin, and sunflower seeds next to the cucumber.

Step 5

Top the lettuce with the prepared tuna fritters. Optionally, garnish with some fresh parsley and lime wedges. Enjoy!

  • Cucumber – 1 medium
  • Lettuce – 50 g
  • Currants Red And White Raw – 40 g
  • Blueberries – 40 g
  • Cherry Tomatoes – 60 g
  • Pumpkin seeds – 30 g
  • Sunflower seeds – 40 g
  • Egg – 3 medium
