Thinly slice the beefsteak tomato and the cherry tomatoes. Arrange the arugula across a large serving plate. Layer the tomatoes over the arugula, mixing the different types of tomato. Slice the olives in half and scatter over the tomatoes.

Roughly chop the fresh basil. Scatter the basil over the salad. Slice the goat cheese into bite-sized pieces. Arrange the goat cheese across the salad.

Add the lemon juice, olive oil, salt and pepper to a small bowl. Whisk to combine. Drizzle the dressing evenly over the salad. Serve immediately.
